Pink Lemonade Pound Cake

1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package instant lemon pudding mix
4 eggs
1/3 cup vegetable oil
1/2 cup milk
1/2 cup pink lemonade concentrate
4 drops pink or red food color, optional

1 cup frozen pink lemonade concentrate, thawed
1/2 cup white sugar

Preheat oven to 350. Grease and flour one 10-inch tube pan or bundt pan.
Combine the cake mix, lemon pudding mix, eggs, vegetable oil, 1/2 cup lemon concentrate and the milk. Mix until smooth. Pour the batter into the prepared pan.
Bake at 350 for 50 minutes to 1 hour.
Remove from oven and prick cake all over with a fork. Immediately pour lemonade glaze over top of cake.
Let cake stand in pan until almost cool.
Make glaze by combining the remaining thawed frozen lemonade and the white sugar. Mix thoroughly and pour over still warm cake.

  2. Made this cake today for my daughters' birthday. It was delicious and a huge hit with the guests. My glaze was not very pink like shown in the picture, but super yummy.

    1. I am glad you enjoyed it. I am not sure why the glaze was not as pink. It seems that people are getting varied results with the recipe. The only thing I can think of that would produce such varied results would be perhaps the brand of pink lemonade might vary as to how pink it is. A drop of two of red food coloring could add more pink color, if you would like more.

  3. I made this last night and I am sorry to say it did not taste as good as it looked. My family and I thought it was way too sweet.

  4. Made this for a baby shower did not turn out pink at all and followed directions to a T. :(

    1. I am sorry yours did not come out as pink. Perhaps it was the brand of pink lemonade? You can always add a drop or two of red food coloring, if you should try it again.

  5. In the process of making it right now. I got it to turn out pink by using strawberry supreme cake mix. =) I'm also making a lemon pound cake. I'm going to stack them on a tier cake stand then put the strawberry lemonade glaze on the lemon pound cake and the lemon glaze on the strawberry pound cake.

  6. When you say "white sugar" for the glaze...are you talking about granulated sugar or powdered sugar?
