Peach (or other fruit) Cobbler

Did you know that August 22 was National Eat a Peach Day? Here is a good way to do just that.

Preheat the oven to 425 degrees F


Make Filling:
4 cups peeled and sliced fresh peaches (You can add other fruit with it too. I like a few blackberries in it.)

3/4 cup brown sugar
1 tea cinnamon
1tea vanilla
1 Tab flour
Generously butter a 1 1/2 quart shallow baking dish. Place the sliced peaches in the dish and sprinkle with brown sugar, cinnamon, vanilla and flour. Mix gently. Bake for 10 minutes. Meanwhile make the crust.
