Enchiladas

1 1/2 lbs Ground Beef
3 small onions, diced

1 tsp Cumin
1 Can Green Chilies
14 1/2 oz can Diced Tomatoes
1 Can Enchilada Sauce
1 can corn, drained
1 can black beans, drained

Tortillas
Shredded Cheddar Cheese

Prepare: Cook ground beef with onions and put in a small freezer bag when cooled.  Mix together cumin, green chilies, diced tomatoes corn, black beans and enchilada sauce in a freezer bag.

To Cook: Put sauce in crockpot and cook 1 hour.
Vegetarian: Strain out the corn and black beans and put in a center of a tortilla shell and cover with cheese. Fold tortillas and put in a casserole dish. Pour some enchilada sauce over shells. Top with cheese.
Meat: Add meat to sauce and put in a center of a tortilla shell and cover with cheese. Fold tortillas and put in a casserole dish. Pour some enchilada sauce over shells. Top with cheese.
GFCF: Same as meat, except use gfcf cheese and corn tortillas.
Bake 1 hour at 350.
