2-11/2-inch piece of fresh ginger
6 tablespoons rice vinegar
4 tablespoons sesame oil
2 tablespoon canola oil
4 teaspoons soy sauce
6 tablespoons water
1 bag (about 4 1/2 cups) mixed salad greens
2 red or yellow bell pepper, thinly sliced
1 sweet onion, thinly sliced
8 ounces soba noodles
1 1/2 pound cooked thinly sliced flank steak (left over from Flank Steak with Chimichurri Sauce)
Cook the Soba noodles and set aside.
Slice carrots into thin strips. Mix together the next six ingredients. Pour over carrots and let them marinate.
Make a salad with the greens, bell pepper and onion slices. Pour the carrots with the marinade over the salad. Top with Soba Noodles and flank steak slices. Serve.
