Cucumber-Mango Slaw

1/2 large cucumber–cut into strips,half peeled
1 mango–diced
1/3 cup carrots–cut into strips
1/4-1/2 teaspoon chili powder
2 tablespoons rice vinegar
2 teaspoons olive oil
pinch salt

Prepare vegetables and fruit as directed and add to large bowl. Whisk vinegar, olive oil, chili powder and salt. Pour vinaigrette over slaw. Stir to mix evenly.
