Tex-Mex Cups Bar

4-6 cups cooked rice
2-15 oz. can black beans, drained and rinsed (or 4 cups cooked black beans)
about 1 cup shredded cheese (use dairy-free cheese for dairy free!)
2 avocados, diced
about 1 cup chunky salsa (or Pico de Gallo)
taco meat (hamburger with taco seasoning), taco meat with beans, or shredded chicken taco meat
sour cream
Tortilla chips

Cook the rice as directed.
Set out the rest of the ingredients as fixin's.
Each person layers the ingredients into cups as they wish. Eat. Repeat.
Serve with tortilla chips.
