Fiesta Rice

4 cups cooked brown rice (If you don't have any on hand as a leftover, make this first.)
2 cans red beans
1 red pepper, seeded and chopped
1 green pepper, seeded and chopped
1 cup pureed tomatoes
1/4 cup lime juice
1 teaspoon ground cumin
Salt and pepper to taste

Mix together in a large pot cooked  brown rice, red beans, chopped red pepper, chopped green pepper, pureed tomatoes, lime juice and ground cumin. Season with salt and pepper to taste. Heat until warm and then turn heat to low, cover and keep warm until serving time.
