1/2 onion, chopped
1 pound ground beef
1 package taco seasoning mix
1 jar salsa
1-14 ounce can chopped tomatoes, or if you like it hotter, one can Rotel chopped tomatoes with chilies
1 small package frozen corn
1 can kidney beans, drained
1 pound pasta, we used shells, but you could use any shape you like
2 cup sharp Cheddar cheese, shredded (one cup goes in the casserole, one cup is sprinkled on top)
2 eggs, beaten
2 1/2 cups milk
1/2 cup butter

* To make a quicker meal, you can substitute a box of Macaroni and Cheese mix for the pasta, 1 cup of the cheese, the eggs, milk and butter)

Cook onions and ground beef together until the ground beef is cooked. Meanwhile put water on to boil to cook the pasta. Add the taco seasoning mix and the water required on the package of seasoning mix. Add tomatoes, corn, kidney beans.  Combine  1 cup of the cheese, eggs, milk, butter and pasta in a baking dish and mix well. Add the ground beef mixture and stir. Sprinkle the remaining cup of cheese over the top. Bake at 350F for 30 minutes.

If you substitute the boxed Macaroni and cheese, you need to make it as the box suggests in a casserole dish and then mix in the ground beef mixture. Top with cheese and then bake until cheese has melted; about 10 minutes.

You can also make this vegetarian by leaving out the ground beef.
