1/2 cup peanut butter
1/4 cup honey
1/4 cup coconut oil
1 cup oats and 1 cup of dried fruit, nuts, chocolate chips or anything you like OR 2 cups oats (make sure they are gf if needed)
In a sauce pan, melt together every thing but oats/fruit. Remove from heat. In a large bowl, pour the oats/fruit in and add the melted mix. Stir until evenly coated. Coat a 9X12 baking dish with nonstick cooking spray or butter. Press oat mix into pan. Chill for 2 hours and then cut into bars. You can wrap these individually and then store in the fridge.
