Fry a couple pieces of bacon in a frying pan until crispy. Remove bacon from pan, crumble and set aside. In the bacon fat, add 1 medium onion, peeled and cut into 1 inch chunks. Cook until they start to soften, about 5 minutes. Add 4 tart cooking apples, cored and cut into 1 inch chunks. Cook 1 minute. Cover and cook 3-4 minutes more, stirring occassionally. Uncover and sprinkle with 2 Tab. brown sugar and the crumbled bacon. Serve hot.
