Minted Potato Salad

Mint in potato salad? I know; I was skeptical at first, too, but it is wonderful combined with the green onions and the vinaigrette.

2 lbs. baby new potatoes, cut in half after cooked
4 green onions, chopped finely
16 cherry tomatoes, cut in half
6 Tab. chopped fresh mint
4 Tab. olive oil
2 Tab. lemon juice


Boil potatoes 10 minutes or until they are tender. Put in a bowl to cool while you complete the rest of the recipe. Prepare vegetables, including mint put them in the bowl with the potatoes. Add oil and lemon juice and mix. Serves 8.
