Bacon-Beef Stew

This stew is great for those who love bacon cheeseburgers.
The original recipe is from The Children's Step-by-Step Cookbook by Angela Wilkes.

1 1/2 lbs. stew beef cubes
2 slices bacon
2 onions, chopped
1 clove garlic, minced
2 cups beef stock
1 cup water
2 carrots, sliced
a few strips of orange peel
a large pinch of Italian seasoning
2 Tab. oil
2 Tab. chopped cilantro, optional
1 Tab. flour
1 Tab. Tomato puree
salt & pepper to taste

Mix the flour, salt and pepper on a plate and lay the beef cubes on top. Turn and toss the meat until each piece is coated with flour. Heat 1 Tab. oil in a large saucepan and fry the carrots and onions for a few minutes. Remove from pot with a slotted spoon. Add the rest of the oil and heat. Add the beef and bacon and stir as it cooks until it is lightly browned all over. Return the vegtables to the pot with the meat. Add the tomato puree, garlic, herbs and orange peel and stir. Add the stock and water and stir. Put a lid on the saucepan and cook for about two hours or until the meat is tender.
