This is a gluten and casein free dessert for those who can't have wheat or milk and miss Peanut Butter Cups. This is an adaption of No-Bake Bars from Betty Crocker.
3 cups Corn or Honey Nut Chex
rounded 1/4 cup peanuts
1/4 cup honey or light corn syrup
1/8 cup sugar
1/4 cup peanut butter
3/4 cup (dairy-free) chocolate chips
Grease a square glass baking dish. In a large bowl mix Chex, peanuts and 1/4 cup of the chocolate chips. Set aside. In a saucepan heat honey and sugar to a rolling boil, stirring constantly. Remove from heat. Stir in peanut butter until smooth. Pour over cereal mixture in bowl and stir gently until evenly coated. Press mixture into the baking dish and let cool for 15 minutes. In a small microwaveable bowl melt the remaining chocolate chips. Drizzle over bars. Put in refrigerator until firm. Cut into bars. Enjoy.
