Jambalaya

This recipe is wonderful for using up little bits of leftover meat you have in the fridge.Heat 2 Tab oil in a large pot. Add 1 1/2 cups chopped onion, 1 green pepper, chopped and 2 medium cloves garlic, minced. Cook until lightly browned, stirring occasionally. Add 2 cups of any combination of ham, chicken, shrimp or sausage and 1 cup white rice (not instant). Cook and stir until rice is well coated with oil. Add 1/2 tea. thyme, 1/2 salt, 3-4 drops of Tabasco sauce, 1-16 oz. can chopped tomatoes and 1 1/2 cups broth or water. Cover and simmer until rice is tender and liquid absorbed (about 20-25 minutes) or you can put it in a slow cooker and let it simmer all day. The smell of it cooking with drive your family crazy.
