Beef Fajitas in Slow Cooker

1 1/2 Flank Steak, cut into strips
1 onion, sliced
1 green pepper, cut into strips
1 red pepper, cut into strips
1 Jalapeno pepper, chopped
1 Tab. Cilantro, chopped
2 cloves garlic, minced
1 tea. chili powder
1 tea. ground cumin
1 tea. ground coriander
1/4 tea. salt
8 oz. can chopped tomatoes
12 8 inch flour tortillas (or corn torillas for Gluten-free recipe)
Toppings (your choice): sour cream, cheese, salsa

In a crock pot or slow cooker combine Flank steak, onion, peppers, cilantro , garlic, spices and tomatoes. Cover and cook on low for 8-10 hours or on high for 4-5 hours. Remove meat from slow cooker and shred. Return meat to slow cooker and stir.
To serve: Spread meat mixture onto flour tortillas and top with your favorite toppings. Roll up tortilla and enjoy. Serves 6-8 people.
